A mix of lectures and field trips in the Loire Valley, Brittany and Normandy. Examines how smaller terroir-driven food and wine producers create wealth in economic, ecological, social and cultural dimensions. Offered in English in collaboration with UVic partner university L'Ecole; Agricultures in Angers, France.
